Types of Papeercorns

Peppercorns, are considered to be the most traded spice around the world because of its characteristic flavor and unique aroma.

We need these gorgeous peppercorns every time when we make pasta, pizza, lasagna, enchiladas, fajitas, salads, soups, sandwiches, wraps, burgers, etc…….list is too long.. yeahhhh….????? Our dining table looks boring and empty without that bold and beautiful pepper crusher that produces beautiful sound….

Peppercorns are fruit. Different colored peppercorns have distinctively different flavors.

All White, green and black peppercorns are from the piper nigrum plant of the piperaceae  family.

Major cultivation of peppercorns takes place in asia, especially in India and Vietnam.

 

Let’s know about them in details.

Types of peppercorns:

  1. Green peppercorns:

These fruits are picked when they are immature and unripe.

They are then air dried, freeze dried or brined.

To see the green ones is completely a visual treat to our eyes.

They have pleasant aroma and fresh flavors.

They don’t last very long and have to be used quickly.

These are mostly used for pickles.

 

  1. Black peppercorns:

This is the most common variety which is used in most of the dishes.

The unripe green peppercorns are harvested, cooked in hot water and dried.

Sometimes, they are just dried completely till they turn into black ones.

 

  1. White peppercorns:

White peppercorns are the black peppercorns that have the black skin removed.

As the outer covering doesn’t exist here, taste of these peppers is less pungent and less sharp.

Good for light colored sauces in which we don’t want the peppercorns to be visible.

 

  1. Red peppercorns:

They are the green peppercorns which are allowed to fully ripen on the plants.

They are carefully dried to preserve their natural red color.

Mostly used in salad seasoning.

 

  1. Pink peppercorns:

Pink peppercorns are not true peppercorns. But, they are the ripe berries of Brazilian pepper tree.

As their size and shape are similar to the true peppercorns, they are sold as peppercorns.

They have a little bit of pepper like taste.

They are mostly used for garnishing purpose and salad seasoning due to their pretty color and mild taste.
